Vangi Bath

Ingredients:

  1. Brinjal (1 piece)

  2. Onions (3 pieces)

  3. Rice (1 big cup)

  4. Ginger & garlic

  5. Tomato puree

  6. Green chili(optional)


Spices:

  1. Salt

  2. Pepper

  3. Chili powder

  4. Garam masala

  5. Turmeric powder

  6. Vangi Bath powder

  7. Coriander powder(optional)

  8. Cumin seeds(Jeera)

  9. Mustard seeds(Rai)

Steps:

  1. In a nonstick pan add oil.

  2. After the oil is heated up, add cumin and mustard seeds and after a few seconds add finely chopped ginger and garlic.

  3. Add onions into the pan after the garlic has turned a bit brown, and heat till onions are golden brown.

  4. Add Chopped Brinjal to the mix and cook it till they become brown and crispy.

  5. Add the spices according to your preference in the pan and mix well.

  6. Then add the tomato puree and reduce the flame to medium-low to not burn the spices.

  7. Add cooked rice and let it simmer for a few minutes to mix well with spices.

  8. Serve on a plate and enjoy!
